Recipe: Spiced Duck with Florida Grapefruit Salsa
Serves 4
Ingredients:
4 duck breasts
3 tbsp honey
1 tsp ground ginger
½ tsp ground cinnamon
½ tsp ground cumin
Salt and freshly ground black pepper
For the salsa
2 Florida grapefruits
1 small orange
2 spring onions, chopped
2 tbsp extra virgin olive oil
Method:
Preheat the oven to 200C/Gas 6. Trim the excess fat from the duck breasts and score the skin with a diamond pattern. Mix the honey, ginger, cinnamon and cumin together. Season the mixture with salt and freshly ground black pepper. Heat a large frying pan over a high heat and put in the duck breasts, skin side down. Fry for two minutes, until golden. Turn them over and fry the undersides for a further minute. Transfer them to a roasting tin and brush the skins with the honey mixture. Roast for 10-12 minutes, until cooked, but still slightly pink in the centre. Meanwhile, cut the skin and pith from the grapefruits. Hold them over a bowl and carefully remove the segments so that any juice drips into the bowl. Add the segments to the bowl. Do the same with the orange. Add the chopped spring onion and olive oil and season with salt and freshly ground black pepper. Remove the duck from the oven and leave to rest in a warm place for 2-3 minutes. Cut into slices and serve with the salsa.
