To make delicate, wafer-thin pancakes, add a little beer to your batter (one part beer to two parts milk). If you have any left, keep it in the fridge - it'll be better the second time around! Sparkling water has the same effect without the taste or alcohol.

Wrap each one in cooking paper, wrap them up and freeze.
Flipping tips
Remember to use a high heat and make sure your oil is piping hot in your pan. Swirl the batter quickly and thinly, cook until set and small bubbles appear on the surface. Use a wooden spatula to flip if you're struggling. Use a warm tea towel to keep the rest of your pancakes hot.
