Peach cheesecake

Serves 4-6
Preparation: 20 min
Set aside for 12 hours
Refrigeration: 6 hours minimum

Ingredients
4 yellow peaches
250g gingerbread (home-made if possible) 
100g butter
30g brown sugar 
500g fromage frais/mascarpone cheese 
1 natural yoghurt 
100g castor sugar
1 lemon
2 egg whites
6 sheets of gelatin
