We could all eat more veg, but not just any old how. Veg swimming in oil and butter does not a healthy diet make: frankly, you're better off eating pasta then fried vegetables.

> How to cheat: steam, boil, wok and bake your veg with herbs and spices to add taste. Vegetables don't need to be drowned in oil, butter or cheese to bring out their flavour.
Recipe to try: Easy baked ratatouille
Wash and cube a mixture of courgettes, aubergines, peppers and tomatoes and place under the grill, drizzled with 1-2 tbsp oil. Sprinkle with herbs and spices (cumin, chilli, fennel, coriander, thyme and mixed herbs), rock salt and freshly-ground pepper, and mix with your hands. Bake for 45 minutes at 200°C (don't use a traditional baking oven, which may dry out the veg). Enjoy on its own, hot or cold, with pasta or an omelette.
