- 500g vanilla ice cream - 6 ripe yellow peaches - 2 teaspoons lemon juice - 100g caster sugar - 100g redcurrants - 1 sprig fresh mint Recipe Peel peaches, cut open and remove stone. Blend 4 peaches with sugar and lemon juice to make a coulis, then chill. Slice remaining 2 peaches into strips, then wash mint and berries and leave to dry on a clean tea towel. To serve, share coulis out onto 4 dessert plates, with two scoops of ice cream on each one. Arrange the slices of fruit around the ice cream and decorate with a few mint leaves and redcurrants. Serve immediately. Our Advice: This makes a great dessert for spontaneous dinner parties, as you can use frozen redcurrants. | |||||||||||||||||||||
