Cooking: 20 to 30 minutes
Ingredients for 4 people:
- 4 yellow peaches
- 4 nectarines
- 150g caster sugar
- ½ vanilla pod
- ½ stick cinnamon
- 1 star anis
- 2 cloves
- 200ml dry white wine
Recipe
Peel peaches, wash nectarines without peeling. Cut fruit open, remove stones and slice thickly.
Place in a large saucepan with sugar, grated vanilla, cinnamon, star anis and cloves. Add wine.
Cook over a low heat and simmer for 20 to 30 minutes, stirring from time to time, until fruit starts to disintegrate and juice becomes syrupy.
Remove from heat and leave to cool completely. Serve chilled, in a pretty bowl, sprinkled with extra spice.
