With an average calorie count of 54 cal per 100g and 85% water, apples are great hunger-busters.

They are also rich in minerals and trace elements, with around 145mg potassium and smaller quantities of phosphorus, calcium, magnesium and traces (3mg) of sodium.  A high water, low sodium content mean apples also have a strong diuretic action.

The trace elements (zinc, manganese, copper, iron, boron, fluorine, selenium, vanadium, molybdenum, etc.) are also present and play an essential role in cellular metabolism.

They contain a range of vitamins, including B, E, C and provitamin A in varying amounts, depending on the variety.  Cox’s Pippins and Boskoop have the highest vitamin content, while Golden Delicious and American red apples come in at the bottom.  Remember that cooking destroys 25 to 30% of these vitamins.
