Production

Producing chocolate is a fine art. Cocoa and sugar have very different physical properties, so putting them together and getting an even mixture is actually quite complicated.

- First, the cocoa solids are mixed with sugar and cocoa butter. 
- The mixture is heated and mixed to achieve a soft texture. 
- It is then chilled so that the cocoa cristallises.  

Many different types of chocolate exist, mostly defined by their percentage of cocoa solids and added ingredients.
