Fats and sauces are very high in calories, and you can make quite a difference to your calorie intake by using healthier versions. All you need to do when cooking from scratch is reduce your quantities: use a bit more water instead of fat to make lighter sauce, butter, mayonnaise or cream (go for 15% fat cream). These small changes can make a real difference.
Our nutritionist says: "As long as you don't reduce the fat too much, certain fats such as lighter sauces and 15% fat cream can be excellent for slimmers because they retain most of their original taste. All the same, take care not to double your portions and remember that light butter spreads far more easily than ordinary butter, so don't overdo it!"
