How are they produced?

Dr Cohen: The best-known sweetener is aspartame, which is a complex of two amino acids. Acesulfame sodium is a synthetic product made from aceto-acetic acid. The oldest of the lot, saccharine, is also a complex, like soduim cyclamate. Sucralose is a natural product obtained from saccharose but it's not as widely used because it's expensive to produce.
