• 4 slices of pineapple
• 100g raspberries
• 200g blackberries
• 1 kiwi
• 100g icing sugar
• 2 tbsp lemon juice
• 16 leaves mint
• 40 black grapes
• 40 white grapes
• 4 pots fromage frais/cottage cheese (as firm as possible)
Peel and chop half the fruit into small pieces except for the grapes.
Blend, add the sugar and lemon juice.
Cut the rest of the fruit into pieces (except for the grapes - cut these in half). Chop the mint and stir into the fruit coulis, setting a few leaves aside for garnishing).
Wash and de-seed the grapes, add to the coulis and refrigerate.
Decorate the plates with the coulis.
Place the cottage cheese or fromage frais in the centre and garnish with a mint leaf.
