How can you make sure they are properly cooked?

The most important thing is to properly heat the barbecue before you start cooking.  If you’re using a traditional barbecue, you need to wait until the coals are glowing, or if you’re using an electric or gas-powered barbecue, it should be hot enough to prevent you from holding your hands too close.

Always use tongs to turn your meat.  Kebabs and smaller pieces should cook fairly quickly close to the hot coals, while steaks and larger pieces should be cooked more slowly, further away from the heat.

The secret of a successful barbecue is to stay nearby to season, turn meat and brush tasty marinade and sauces over the food while it cooks.
