Orange and ginger pancakes |

Ingredients :
For the batter:
125g plain flour
2 eggs, beaten
250ml milk
1 tbsp caster sugar
30g butter + 30g for frying
2 tbsp Grand Marnier
1 pinch of salt
For the garnish:
2 oranges
1/2 pot of marmalade
50ml orange liquor
powdered ginger
icing sugar
Recipe :
Sift the four and salt into a bowl. Make a well in the middle and add the beaten egg, sugar and 1/3 of the milk. Mix vigorously with a whisk, to remove any lumps. Gradually add the rest of the milk.
Melt the butter, and add to the batter along with the liquor. Mix, cover and then leave to stand for 2 hours at room temperature.
Peel the oranges, and separate the segments. Place in a bowl, add the Grand Marnier, ginger powder and mix. Marinade in the fridge for 30 minutes, to release the flavours.
Heat the remaining butter in a frying pan, and make your pancakes.
Spread your pancakes with marmalade, fold in half and sprinkle with icing sugar. Grill for 2 minutes.
Arrange your pancakes on a plate and drizzle with the orange mixture.
Advice :
Great accompanied with a glass of cider.
