Ingredients :
For the pastry :
250g flour
100g soft butter
1 egg
100g sugar
For the filling :
6 egg yolks
1/4 cup ( 50g ) castor sugar
1 tin sweetened condensed milk
2 or 3 limes
For decoration:
1 cup ( 24 cl) cream or liquid crème fraiche
A few drops of vanilla essence
1/4 cup castor sugar
Recipe :
1-Make pastry.
Mix the butter, flour, sugar and egg in a large bowl, rubbing in the fat, until pastry has the consistency of breadcrumbs.
Roll into a ball and chill for half an hour.
Roll out and line a greased flan dish, prick with a fork and put in oven at a low heat to pre-cook for 10 minutes.
Take out of oven and leave to cool.
2-Make the filling.
Put the egg yolks and sugar in a mixer and mix until white.
Meanwhile, squeeze the limes until you have at least 18ml of juice. grate off the zest and add to the mixture.
Add the tine of condensed milk and mix well.
Pour on top of pastry and put in fridge, leave to chill for at least 2 hours.
3-10 minutes before serving, make the topping.
Whisk the cream, sugar and vanilla and put on top of flan filling. leave to chill for 10 minutes in the fridge.
4-Serve with ice cream.
Advice :
For the topping, hip the cream well before adding the sugar, it should be beginning to thicken.
