Monbazillac fruit salad

Ingredients :
Zest of 1 lemon
Zest of 1 orange
500ml Monbazillac wine
140g sugar
1 stick cinnamon
1 teaspoon pink peppercorns
1 small melon
150g strawberries
100g raspberries
100g wild strawberries
100g redcurrants
A few mint leaves
 
Recipe :
1. Roll the zest into sticks.
2. Bring quickly to the boil and strain.
3. Pour Monbazillac into a pan, add zest, sugar, cinnamon and pink peppercorns.
4. Bring to the boil and leave to cool.
5. Peel and slice soft fruit, put in a large salad bowl.
6. Once the syrup has cooled, add fruit and put dish into fridge.
7. Serve chilled and decorate with mint leaves.


Advice :
Prepare this dish the night before if possible. If not, allow at least 3 hours' chilling time before serving.
You could also use frozen fruit, bought or picked, make sure you defrost it thoroughly beforehand.
