Ingredients :
12 fresh oysters
4 rashers of streaky bacon
2 tbsp parsley, finely chopped
1 clove garlic, crushed
1/4 cup dry white wine
tabasco (red)
Recipe :
1- 'shuck' the oysters (or get your fishmonger to do it for you)... Open them, saving the juice. Loosen the oyster from the half-shell, so it can be eaten more easily.
2- Preheat the grill. Line the grill pan with a layer of crushed metal foil (to prevent the shells tipping over).
3- Cut each slice of streaky bacon into 3.
4- In a small bowl, mix the garlic and parsley.
5- Garnish the oysters with a piece of bacon and top with the parsely.
6- Into each shell pour a little of the oyster juice and white wine. Splash a drop of tabasco on top.
7- Grill 4 inches from the heating element, for 3 minutes, or until the oysters begin to curl at the sides. Serve immediately.
Advice :
Accompany with a glass of: Champagne or dry white wine.
Agels on Horseback were born in New Orleans. they earned their name due to the fact that the oysters curl as they cook, resembling angel's wings.
