Ingredients :
50g butter
50g flour
250ml milk
3 eggs, separated
2 teaspoons coffee essence
Recipe :
Gently melt butter in a pan, add flour, milk and coffee essence.
Mix well, then add sugar and bring to the boil.
Remove from heat, then add egg yolks.
In a bowl, beat egg whites until stiff.
Stir into mixture.
Grease and sugar a souffle dish, then fill three quarters with mixture.
Cook for 20 to 25 minutes in a 150°C (300°F) oven.
Serve immediately.
Advice :
Do not open the oven door during baking, otherwise your souffle will flop!
