Ingredients :
6 eggs
250g dark chocolat
100ml strong coffee
100g + 10g butter
75g brown sugar
40g flour
50ml creme fraiche
3 tablespoons cocoa powder
50ml coffee liquor (such as Kahlua)
1 tablespoon icing sugar
Salt
Recipe :
Gently melt 150g chocolate in a bowl over a pan of boiling water, along with coffee.
Roughly chop butter, and add. Mix well.
Preheat oven to 150°C (300°F).
Separate egg whites and yolks, putting whites to one side.
Beat yolks with sugar until white.
Add melted chocolate, then flour.
Beat egg whites with a pinch of salt until stiff, then add to mixture.
Grease a cake tin, then pour in mixture.
Bake for 40 minutes at 150°C (300°F).
Melt the rest of the chocolate (100g) in the same way.
Remove from heat, then pour in creme fraiche and coffee liquor. Leave to cool, stirring from time to time.
Take cake out of tin, then pour coffee-chocolate icing all over.
Chill for ten minutes, then sprinkle with cocoa powder and icing sugar.
