Spicy cheese & tomato pasta

Ingredients :
250g of dried pasta
1 large onion, chopped
1 teaspoon of chilli
1 clove garlic
1 good knob butter
2 tins tomatoes
Cheese for grating on top - parmesan is best, or strong cheddar
 
Recipe :
1-Place your pasta in a large pot, cover with boiling water and bring to the boil, stir and reduce heat slightly

2-Melt the butter in a small pot and add the chilli and garlic, reduce heat to stop the butter from burning

3-Add the onion and cook until soft

4-Add the tins of tomatoes and bring to the boil

5-By the time you have done this your pasta should be ready, don't overcook - it should be firm to the bite

6-Remove from heat, drain your pasta, add the sauce and mix through

7-Lastly add the grated cheese (no need to have it on the heat) and serve

8-Add grated parmesan and a splash of tabasco if you wish...enjoy...


Advice :
This recipe will feed 2 people with large appetites!

It's very cheap to make and very low in fat (apart from the cheese and butter - use half fat cheese if you want to reduce the calories, or olive oil instead of butter).

Don't overcook the pasta as it will make it a bit slushy.

Keep your eye on the garlic and chilli as it burns quickly!
