Ingredients :
Yeast mixture:
350g rye flour
5g baker's yeast
2 tablespoons yoghurt
1 tablespoon sugar
300ml tepid water
Dough:
300g rye flour
150g splet/wholemeal flour
50g honey
1 teaspoon salt
200ml tepid water
7g brewer's yeast
3 teaspoon cumin seeds
4 tablespoons olive oil
Recipe :
Prepare the yeast mixture, by mixing yeast, yoghurt, sugar, flour and water together.
Leave overnight in a warm place, for a stronger taste.
Making the Dough:
Sieve the two flours into a large bowl, then make a well in the middle. Pour in yeast mixture, with honey, cumin, salt, brewer's yeast, water and olive oil.
Stir well, then knead for 10 minutes, until you have a firm, smooth dough.
Cover and leave to rise for an hour and a half.
Knead for a couple of minutes to bring dough down again, then divide into two loaf shapes.
Place on a baking sheet, score each one twice lengthways, then leave to rise for an hour.
Preheat oven to 425°F (220°C), add an oven-proof bowl of water and put loaves in oven to bake for 40 minutes, turning heat down to 350°F (180°C) after 15 minutes.
