Coffee cake

Ingredients :
6 oz/170g Self-Raising flour
½ Teaspoon/2.5ml Baking powder
½ Teaspoon/2.5ml salt
5oz/142g Caster sugar
4oz/113g Soft margarine or butter
2 Eggs, size 2 or 3
1 tablespoon/15ml Instant coffee powder (or granules dissolved in milk)
3 tablespoons/45ml milk
2 oz./56g Crushed walnuts

 
Recipe :
1.Crush the walnuts if not already done.

2.Place all ingredients in large mixing bowl and beat thoroughly until you have a smooth mixture.

3.Spread evenly into a lined 2lb(800g)loaf tin.

4.Bake for 30 minutes at 375°F (190°C) or gas mark 7, combination 190 and warm for 25 minutes.

5.If using coffee granules, mix with a little milk to dissolve, then add to mixture as normal.

6.Increase the quantities by 50% if using an 8 inch cake tin.



Advice :
Use Mocha frosting.

Quite a heavy cake, great for a treat!
