Ingredients :
1 ½ cups risotto rice
200g peas
200g prawns, fresh or shelled
2 tablespoons grated parmesan
2 tablespoons olive oil
salt and freshly-ground pepper
Recipe :
Heat the olive oil in a large pan and heat the rice for 5 minutes on a medium heat, mixing from time to time.
Add 2 cups of water and the peas.
Cover and leave until the water has been absorbed, stirring from time (about 7 minutes).
Add 2 more glasses of water and the prawns. Leave until the water has been absorbed again (about 15 minutes).
Turn off the heat. Sprinkle with parmesan, season and mix well, and serve immediately.
