Asparagus and parmesan gratin |

Ingredients :
1 kg white asparagus
500g green asparagus
10 teaspoons single cream
50g grated parmesan
juice of half a lemon
pinch of nutmeg
2 pinches salt
freshly ground white pepper
Recipe :
Scrub, peel and rinse the asparagus and cook for 20 minutes in boiling water.
Leave to dry on a folded tea towel.
Put the cream into a bowl and whip until it starts to stand firm, add the salt, pepper, nutmeg and lemon juice. Whip to mix.
Taste and season further if required.
Chop the asparagus into quarters and put into an ungreased dish.
Pour the creamy mixture over the top and sprinkle with grated permesan.
Bake on a medium heat (160°C, th5) for 20-25 minutes.
