Fruits of the forest gratin |

Ingredients :
250g strawberries
125g blackberries
125g redcurrants
125g raspberries
100g ripe pears
100 g (10 cl) mineral water
2 tablespoons lemon juice
2 eggs
25g caster sugar
75g fromage frais (0% fat)
75g single cream (35% fat)
2 sheets of gelatine

Peel and cut the pears into cubes and place in a bowl with the water and lemon juice. Coverwith cling film and cook in the microwave for 1 minute. Mix to get a smooth mixture without lumps.
Put the gelatine in cold water.
Put the eggs in a small pan with the sugar and the pear mixture and cook over a gentle heat (85°C). Don’t let it boil.
Drain the gelatine and add to the pear mixture. Leave to cool, then add the fromage frais and whipped cream.
Put the fruit onto little dishes, pour the mixture over and place under the grill for a few minutes.
