Leek and potato soup |

Ingredients :
1 large carrot, peeled and sliced
1 large potato, peeled and chopped into 8-10 pieces
1 leek, sliced
1 onion, peeled and diced
1 pint of vegetable stock
1 knob of butter
1 fresh tomato, peeled and chopped
Recipe :
1-Melt the butter in a large saucepan on medium heat and add the vegetables.
2-when the vegetables are soft[test with a blunt knife or wooden spoon] add stock and bring to boil.
3-turn heat down and simmer for 20-30 minutes. allow to cool and pulse it in the blender until liquid. return to hob for 4-6 minuts serve and enjoy.
