Ingredients :
Pastry:
220g flour
100g butter + 20g for cooking
1 natural yoghurt
1 egg yolk
Salt and freshly-ground pepper
Filling:
200g fromage frais
100g grated beaufort
2 tbsp milk
2 eggs
nutmeg
salt and freshly-ground pepper
Recipe :
Place the flour in a bowl, make a well and add the chopped-up butter, egg yolk, yoghurt and 3 pinches of salt. Work in with your fingertips. Roll into a ball and roll with a rolling pin, then make into a ball again. Refrigerate for an hour.
Preheat the oven to 220°C.
Season the fromage frais with salt, pepper and nutmeg.
Add the beaufort and 1 egg.
Roll out the pastry to a thickness of 3 mm and cut into 4 circles of 9cm diameter.
Spread a spoonful of the mixture over one half of each circle.
Wet the edges of the circles with a finger dipped in water and fold over, pressing firmly to make it stick.
Place onto a greased baking tray.
Beat the remaining yolk with the milk and glaze the turnovers with a brush. Cook for 15 minutes.
