Chicken with lemon & capers |

Ingredients :
600g skinned chicken breast
2 tbsp flour
2 tbsp olive oil
Juice of 2 lemons
50 ml white vermouth
2 tbsp capers
2 tbsp finely-chopped parsley
Salt & pepper
Recipe :
Cut the chicken into strips approx. 1cm in length and roll them in the flour until you get a fine, even coating. Season.
Heat the oil in a wok on a medium heat and cook the chicken for 3-4 minutes, turning several times to brown them all over. Remove from the oil using a perforated spoon, and put in a serving dish to keep warm.
Add the vermouth and lemon to the wok and cook for 2-3 minutes until you get a smooth mixture. Add the capers and leave just long enough for them to warm through.
Remove from the heat, add the parsley and mix well. Pour sauce over the chicken and serve immediately. Goes well with rice.
