Ingredients :
400g couscous
350ml warm water
6 tablsp olive oil
zest and juice of 1 lemon
S&P
50g pistachio nuts, shelled
2 spring onions
3 tablsp each fresh coriander/mint
Recipe :
1-put couscous in a shallow dish
2-add half the water and 2 tablsp oil
3-leave for 15mins - then fork it up to seperate grains
4.repeat with the rest of the water.
5 chop spring onions finely.
6. chop the nuts roughly
7zest the lemon and squeeze out juice.
8. stir all ingredients into the couscous.
