Iced meringue fruit dessert

Ingredients :
8 peaches
250g raspberries
200ml UHT liquid cream
2 flat tbsp icing sugar
2 tbsp rosewater
8 scoops vanilla ice cream
100g shelled pistachios
16 small meringues
 
Recipe :
Peel the peaches, cut in half, remove stones and dice the fruit.

Roll the raspberries onto a damp cloth.

Crush the meringues roughly.

Whip the liquid cream (make sure it's properly chilled beforehand) until it's very firm and stands up like chantilly cream.

Once the cream is firm and forms peaks that stand up, add the icing sugar and then the rosewater, still whipping. Refrigerate.

Find 8 dessert dishes or glasses and arrange the peaches and raspberries in the bottom of each. Follow with a layer of crushed meringue, then a scoop of vanilla ice cream, then a tablespoonful of whipped cream.

Sprinkle with pistachios and serve immediately. If you like you can grill the pistachios after shelling for 2-3 minutes on the hob.


Advice :
Go for pale-coloured peaches for this recipe.
