Melon and marzipan fromage frais

Ingredients :
2 fully ripe melons
400g fromage frais (preferably in individual pots)
1 tbsp castor sugar
100g marzipan
500ml muscat dessert wine
50g candied melon

Refrigeration: 2 hours
 
Recipe :
Chop the candied melon into very tiny pieces.

Put the invididual fromage frais into a bowl and sprinkle each with candied melon. Refrigerate.

Cut open the melons, remove the seeds and fibres. Remove the flesh, dice and place in a bowl, along with the juice.

Using a knife, dice the marzipan and add to the melons, along with the castor sugar and wine. Mix gently, cover with cling film and refrigerate until use.

To serve, place the fromage frais onto plates and encircle them with the marzipan-melon mix.



Advice :
Don't prepare the melon too far in advance or else the juice could run, mix with the wine and make the marzipan disintegrate.
