Ingredients :
Freezing time: 4 hours (or 12 hours)
6 lemons
300g sugar
Vodka (optional)
To frost your dessert dishes:
Sugar
Juice of 1 lemon
Food colouring
Recipe :
Press the lemon juice, sieve and add water in a measuring glass until you have 600ml total liquid.
Add the sugar and mix until dissolved. Pour into a pan and bring to simmering point for 3 minutes.
Remove from the heat and leave to cool completely.
Pour into your sorbet maker and follow the instructions that come with your maker. If you don't have a sorbet maker, use an ice cream tub and break up the ice 2 or 3 times during the 12-hour freezing process. When your sorbet is ready, place in an airtight container and freeze.
In the meantime, frost 6 glasses. Place the sugar and 1-2 drops of food colouring in a container with a lid and shake. Pour the coloured sugar onto one plate and the lemon juice onto another. Wet the top of each glass with lemon juice then roll in the sugar, applying light pressure and turning so that it sticks well. Leave to dry.
To serve, remove from the freezer slightly in advance and use an ice-cream scoop to remove from the container. Arrange scoops in your six frosted glasses and drizzle with a little vodka if desired.

You can also buy ready-made coloured sugar for frosting.
