Almond ricotta custard

Ingredients :
1 cup ricotta cheese
½ teaspoon almond extract
1 cup evaporated milk
½ teaspoon cinnamon or nutmeg
3 eggs (beaten)
1 tablespoon lemon juice
¾ cup sugar
1 tablespoon almonds (thinly sliced)

 
Recipe :
1-Preheat the oven to 350F. Press moisture out of ricotta cheese. Heat the milk quickly without boiling and pour over the beaten eggs.


2-Put the mixture the in a blender or food processor, adding the almond extract, lemon juice and sugar. Mix until smooth.


3-Pour into shallow buttered dish, dust with cinnamon or nutmeg and sprinkle with finely sliced almonds.


4. Put the dish inside a larger pan and partially fill with hot water.
Cook 45 minutes at 350F. Test to see if cooked by inserting a knife, which if done will come out clean.




Advice :
Serve once cool, topped with chocolate curls.
