Exotic fruit and champagne granité

Ingredients :
1 mango
1 organic lemon
20 lychees
500ml champagne
1 vanilla pod
Castor sugar

 
Recipe :
Grate a teaspoonful of lemon zest.
Mix the champagne, 150g sugar and 150ml water in a pan, add the zest and the vanilla pod, split lengthways. Bring to the boil until the sugar melts, remove from the heat and leave to cool. Remove the vanilla and set the seeds aside. Pour the mixture into an ice container and freeze for 3 hours. Around 15 minutes before serving, remove from the freezer and refrigerate. Peel the mango and cut into fine slices. Arrange in a round pattern, remove the lychees from their shell and arrange on the plates with the mango. Add a scoop of granité to each plate and serve immediately, decorated with vanilla seeds.
