Grapefruit and red berry jam |

Ingredients :
4 pink grapefruit
juice of 6 oranges
1.2 kg jam sugar
1 tbsp red berries
Recipe :
Peel the grapefruit closely and cut into quarters, retaining the juice and seeds.
Press the oranges, retaining the seeds.
Tie up all the seeds in a piece of muslin, like a bouquet garni.
Pour the orange juice, grapefruit and sugar into a jam-making pot or large saucepan.
Heat over a high heat until the sugar all dissolves, mixing.
Cook for 5 minutes over a high heat, stirring constantly.
Add the red berries and cook for a further 2 minutes.
Place in jars and cover once cool.
Label and store in a dry, cool place away from light and damp.
Advice :
Don't put more than one spoonful of berries in, otherwise it will be too strong.
