Crabstick pie

Ingredients :
200g crabsticks
200g sweet potatoes
2 rolls flaky pastry
100g French emmenthal, grated
1 egg
20g raisins
20g dried chopped apricots
2 pinches allspice
250g mixed leaves
50ml vinaigrette
 
Recipe :
Peel the sweet potatoes and cut into cubes around 1cm wide. Boil the potato cubes in a large pan of water for 5-8 minutes until they are cooked but don't crumble. Set aside in a sieve.

Chop the crabsticks into pieces of 1cm wide and set aside.

In a pie dish, arrange a layer of pastry and arrange the potatoes and crabstick pieces. Sprinkle the apricots and raisins over the top and sprinkle with the grated cheese.

Beat an egg into a bowl with a pinch of salt. using a knife, brush the overlapping edges of the dish with egg. Close the pie with the second roll of pastry, ensuring the pastry sticks around the sides by applying pressure with your thumb ad index finger. Cut any overlapping pastry off using scissors and fold the edge over towards the centre of the pie.

Brush the top of your pie with the rest of the beaten egg and score lightly with a knife. Make a few holes with the sharp point of a knife so that the steam can escape.

Bake for 25 minutes at 180°C.
