Ingredients :
1 tbsp oil
1 lge onion, chopped
2 garlic cloves, chopped
4oz soya mince
1 pint veg stock
1 banana sliced
1 carrot diced
1 parsnip diced
2oz sultanas
2 tbsp tomato puree
2 tbsp wine vinegar
2 tbsp mango chutney
2 tbsp curry paste
150ml milk
1/4 tsp turmeric
5 bay leaves
Recipe :
1-Fry onion in oil in flameproof casserole for 5 mins until brown
2-Add garlic mince, stock, banana, carrot and parsnip. Stir in sultanas, tom puree, vinegar, chutney, curry and seasoning.
3-Bring to the boil then simmer for 5 mins, stirring. Remove from yhe heat and level the surface.
4-In a bowl beat the eggs, milk, turmeric, salt and pepper. Pour over the mixture. Lay the bay leaves on top then bake for 30 mins until the egg has set.
5-Leave to stand for 10 mins before serving.
Advice :
Serve with a green veg and crusty bread.
You can make this with meat if you wish....... fry for a little longer to make sure it is cooked through.
