Sea bass and vegetable parcels

Ingredients :
4 fillets of sea bass (600-700g) or 2 whole sea bass fish
1 lemon
2 sticks of thyme
1 onion
4 tablespoons of white wine
1 leek
2 carrots
1 stick of celery
20g butter
2 tablespoons olive oil
Salt and pepper
Baking parchment
 
Recipe :
Preheat the oven to 210°C (Gas Mark 7).

Peel and finely cut the leek, carrots, celery and onion.

Place each fillet on the baking parchment (cut large enough so that the fillets are well envelopped).

Cover the fillets with the mixture of vegetables.

Add olive oil, white wine, thyme, butter and 2 slices of lemon per parcel.

Add salt and pepper.

Close the parcels up.

Put in the oven for 20 minutes in an ovenproof dish.


Advice :
To get your guests salivating, bring the the parcels to the table and open them in front of everyone to release the delicious smells inside.
