Ingredients :
4 eggs
120g caster sugar
50g sugar
vanilla flavouring
10g flour
55g butter
Either a jar of jam or 250g cooking chocolate for filling
Recipe :
Whip the yolks and sugar together.
Whip the whites until very firm.
Add the yolks and sugar, vanilla, melted butter and flour gently.
Grease a large square of greaseproof paper with butter, spread the mixture thinly onto it and bake for 8-10 minutes at 220 degrees C.
Remove and place on a damp towel. Roll gently with the chocolate or jam filling and leave to set.
Advice :
Chocolate is particularly yummy with this recipe as it half melts and can be re-heated in the microwave as well if you wish. Apricot jam is a refreshing filling too!
