Indian style bean pasta |

Ingredients :
1 tin baked beans
1 cup macaroni or short pasta (cooked)
1 green pepper
1 onion
1 chilli
2 tomatoes
1 tsp coriander/cumin/chilli powder
1 tsp garlic/ginger
salt & pepper
50g mature cheese grated
Recipe :
1-Gently cook the onion, green pepper and chilli until soft and transparent.
2-Chop the tomatoes very small and add to the pan with the spices. Simmer for about 5 minutes until you have a curry-like sauce. If sticking to pan, add a little of the bean sauce. When saucy enough add the tin of baked beans.
3-In an oven proof dish layer half the pasta, then half the sauce, the remaining pasta then the rest of sauce. Top with the grated cheese and grill or oven bake until cheese bubbling.
Advice :
You can add other things eg, aubergine, courgette, just chop very small. Also adjust the spices to suit your own taste.
