Ingredients :
25g sultanas (optional)
4 large, firm bananas
Fresh ginger to taste, thinly sliced
2 tablespoon ginger syrup
2 tablespoon orange juice
2 tablespoon rum
12 to 15 pieces orange peel
Recipe :
Preheat oven to 400°F (200°C).
Put sultanas in a bowl of boiling water. Leave to soak for 5 minutes, then strain.
Meanwhile, grease a deep plate or dish (oven-proof), add a couple of knobs of butter in the bottom, then put into oven and leave to melt.
Remove from oven, pour off most butter, then arrange bananas in dish. Cover with melted butter.
Sprinkle with sultanas and slices of ginger.
Mix together orange juice, ginger syrup and rum and drizzle over bananas, keeping a little back.
Bake in oven for 15 minutes, drizzle with more sauce a couple of times while cooking, to prevent from drying out.
Serve hot with vanilla or rum & raisin ice-cream, or custard.
