Stuffed baby potatoes |

Ingredients :
Makes 12
12 even sized baby new potatoes
Sea salt
100g/4oz Irish Cheddar, finely grated
Flat leaf parsley spriglets, for decoration
Recipe :
Scrub potatoes and make a slit along one side. Place in a roasting tray and sprinkle with crumbled sea salt. Transfer to a pre-heated oven Gas 6 400F 200C for 30 minutes, or until tender. Remove from oven and squeeze open along the slit. Fill with Irish Cheddar to overflow over the top of the potato. Return to oven for cheese to melt, then serve decorated with fresh parsley spriglets.
