Ingredients :
450g/1lb blueberries
1 tbsp Irish runny honey
100ml/4floz double cream
Good splash Irish whiskey
Dessert biscuits to serve
Recipe :
Puree blueberries in a blender, then pass through a sieve to remove seeds. Transfer to a bowl. Add honey to taste. Softly whip cream and stir in carefully. Finish with a splash of whiskey. Pour into cocktail glasses and serve with thin dessert biscuits.
