Turkey in chocolate

Ingredients :
- 4 turkey fillets
- 1 orange
- 2 cloves
- 1 cinnamon stick
- a little grated ginger
- 1 pimento pepper
- 200ml port
- 50g chocolate
- 1 tablespoon cornflour
 
Recipe :
The day before, prepare the marinade: peel the orange zest then press the orange.
In a pan, add the orange juice, the port, the orange zest, the pimento pepper and all the spices with 200ml of water.
Bring to the boil.

Put the turkey fillets in a bowl and cover with the marinade.
Keep it in the fridge for 24 hours.

The next day, brown the turkey fillets in a little olive oil.
Dilute the cornflour in a glass of cold water, filter the marinade and boil it again.

Melt the chocolate in the marinade, then add the cornflour.
Cover the turkey with the sauce.
Let it simmer over a low heat for 30 minutes (just until the turkey is tender).


Advice :
You can change the sauce to chestnuts for Christmas!

Goes well with vintage port or Banyul or Maury.
