Poached pineapple with green mango and chilli |

Ingredients :
450ml (¾ pint) water
225g (8oz) caster sugar
1 pineapple, peeled, cored and cut into 8 wedges
1 green mango, peeled and diced
1 tsp Schwartz Easy Chilli
2 tbsp Malibu
Vanilla ice-cream to serve
Mint leaves for garnish
Recipe :
1. Add the sugar and water to a large saucepan and heat gently until the sugar dissolves.
2. Bring the syrup to the boil, add the pineapple wedges and simmer gently for 5-7 minutes, until the pineapple is translucent, stirring occasionally.
3. Transfer the pineapple and syrup to a bowl and refrigerate until cold, at least 2 hours.
4. Meanwhile, mix the mango with the chilli and Malibu and refrigerate for 2 hours to allow the flavours to develop.
5. To serve, remove the pineapple from the stock syrup and place on a serving plate. Add the mango salsa and a generous helping of vanilla ice-cream. Drizzle a little of the reserved stock syrup over and garnish with a sprig of mint. Serve immediately.
Advice :
The pineapple can be prepared up to 24 hours ahead, simply cover and refrigerate.
