Spicy chilli

Ingredients :
1 tsp olive oil
2 diced onions
2-3 garlic cloves, chopped
500g lean minced beef
3 bacon rashers
1 tin chopped tomatoes
1.5 tbsp tomato puree
1 tin red kidney beans
1 tsp hot chilli powder
1.5 tsp paprika
salt, pepper to season
 
Recipe :
1-Heat the oil in the pan and add the onions and garlic. Cook until slightly softened and browned.

2-Add minced beef and cook until brown, stirring often.

3-Cut fat from bacon using scissors and cut into small pieces, then add to the pan.

4-Cook for 1 minute, stirring often, before adding the tinned tomatoes and tomato puree.

5-Add spices and season to taste.

6-Bring to boil and simmer on a lower heat for 30 minutes.


Advice :
Garlic and spice measurements can be altered depending on preference. Add more chilli for a hotter dish, or less for a milder one.

Delicious served with rice (I prefer wild rice) or wholemeal pasta, or to be used in fajitas.

Swap the tin of kidney beans for 1 tin of whichever beans you like, such as chick peas, adzuki beans, etc.

Can be refrigerated for up to 1 week after making.
