Ham and fig salad

Ingredients :
1 batavia or mix of lettuce leaves
12 slices of Parma ham, cut very finely
9 fresh figs
100g sun-dried tomatoes (around 18)
30g pine nuts
a piece of parmesan (100g)
Dressing: 2 parts olive oil to one part balsamic vinegar


 
Recipe :
1- Wash the salad.
2- Make the dressing.
3- Wash the figs and chop them in half.
4- Heat the pine nuts for a few minutes in a hot pan without adding any oil, until they start to brown. Remove from the heat.
5- Use a vegetable peeler to slice the parmesan into shavings.
6- In a large bowl, mix the salad and vinagrette with your hands so you coat each leaf with dressing.
7- On each plate, arrange the salad, pine nuts, Parma ham, figs and sun-dried tomatoes.
8- Sprinkle with parmesan shavings and serve.
