Lemon and coriander aubergine |

Ingredients :
- 3 large aubergines
- 4 garlic cloves (with the skins)
- a handful of fresh coriander
- 2 lemons
- olive oil
- salt and pepper
Recipe :
Pre-heat oven to 400°F.
Cut the aubergines lengthways into large pieces.
Shape each piece in diagonals to form a diamond shape then put them on a plate with garlic, olive oil, salt and pepper.
Cook for 40 minutes in the oven.
Add the quartered lemons, and put back in the oven for 5 minutes.
Serve hot or cold, sprinkled with coriander.
