Stuffed aubergines |

Ingredients :
- 2 large aubergines
- 1 glass of rice
- 150g hard white cheese (comté or mature cheddar)
- 150g ham cut in little pieces
- 30 g crème fraiche
- fine herbs
- salt, pepper, oil
Recipe :
Heat the oven to 475°F.
Clean the aubergines.
Cut them in half, season with salt and pepper then put them in the oven on an oiled cooking sheet for 25 minutes.
While the aubergines are cooking, cook the rice.
Grate the cheese in the rice once it's cooked and drained.
Take the aubergines out of the oven.
They should be medium cooked.
Remove the pulp with a little spoon.
Crush the pulp with a fork and mix with the cooked rice, grated cheese, ham and some fine herbs.
Fill half the aubergine skin with this stuffing.
Place a little spoonful of crème fraiche on top and put in the oven for 15 minutes.
