Smoked salmon with avocados and fine herbs |

Ingredients :
- 2 avocados
- 4 slices of smoked salmon
- juice of 1 lemon
- 4 tbsp crème fraîche
- a bouquet of chives, dill and parsley
- 1 onion
- salt and pepper
Recipe :
Scoop out the avocado.
Squeeze the lemon juice.
Thinly slice the onions.
Cut off the ends of the chives, dill and parsley.
Feel free to put in plenty of herbs.
Mix all these ingredients with the crème fraiche in a mixer.
Let it sit in the fridge for 20 minutes.
Place a slice of salmon on each plate.
Spread the creamed avocado evenly on top of the salmon slices.
Fold the slices of salmon to form a square.
To garnish, use some strands of chive to wrap the salmon shut.
Serve with salad and a vinaigrette with pink peppercorn.
