Cantonese fried rice with prawns

Ingredients :
250g long grain rice
100g peas (fresh or frozen)
200g frozen pre-shelled prawns
1 onion
2 eggs
To decorate: a handful of cashew nuts (optional)
 
Recipe :
Cook the rice in salted boiling water (it should be slightly crunchy).

While the rice is cooking, beat the eggs and cook 2 to 3 little omelettes in a hot well-oiled pan. Cut into slices and set aside in a bowl.

Peel and finely slice the onion. In a wok, brown the onion and peas in a bit off oil.
Leave to cook for 2 minutes then add the prawns, mix all together and cook for 10 minutes.

Add the rice, mix well and leave to cook for a further 5 minutes.

Add a few crushed cashew nuts and serve immediately.


Advice :
You can prepare all the ingredients in advance and sauté the rice for 5 minutes before serving.
